Chicken Tikka Flat Bread

Follow our quick and easy recipe to a tasty chicken tikka flat bread 😋


👉🏻Low-fat natural yogurt: 250ml

👉🏻Lemon: 1, juiced

👉🏻Garlic: 1 ½ tsp (ready chopped)

👉🏻Ginger: ½ tsp

👉🏻Skinless chicken breasts cut into bite-sized pieces: 2 Large or however many you require.

👉🏻Smoked paprika: 2 tsp

👉🏻Chilli powder: ¾ tsp

👉🏻Garam masala: ½ tsp

👉🏻Red onion: ½, thinly sliced

👉🏻Yellow or Red Pepper:1 largely diced

👉🏻Cherry tomatoes: a small handful, sliced

👉🏻Tilda Lime & Coriander Rice: x2

👉🏻Flat Bread: 4, warmed

👉🏻Coriander: ½ a small bunch to sprinkle on top

Cooking Method

Step 1

Put 1/2 the yogurt, a squeeze of lemon juice, garlic, ginger and garam masala into a small bowl and mix to combine. Tip into a bowl and add the chicken and lots of seasoning, and mix really well. Leave to marinate for 30 minutes.

Step 2

Divide the mixture and diced peppers between 4 metal skewers, leaving gaps between each piece to ensure they get well charred.

Step 3

Heat the grill to high. Put the skewers onto a foil-lined baking sheet and grill on each side until charred and completely cooked through. As an alternative, these can be cooked in the oven for 15 minutes and finished off in the grill to still give that chargrilled flavour

Step 4 

Meanwhile, mix the onion and cherry tomatoes with a good squeeze of lemon juice and some seasoning.

Step 5

Mix together the remaining yogurt in a bowl with a squeeze of lemon juice, a little seasoning, ½ teaspoon of smoked paprika, ½ teaspoon of chopped garlic and a splash of water to loosen.

Step 6

Heat the rice following pack instructions then divide it between the 4 flatbreads. Pile in the onion, tomatoes and chicken, and finish with the yogurt dressing and sprinkle of coriander to taste.

 ....We added homemade guacamole to ours too for a little cheeky extra 👍🏼
